You do have to use foil on the outside so the water bath doesn't leak in, but you have to with almost all springform pans anyway. You can use a metal table knife on it when you do a frozen one and not worry about hurting the pan. They are perfect,a nice weight and don't have the non-stick finish, so you can use any kind of utensils on them without worrying about scratches. The buckles seem very well made and pop open easily for removing the bottoms. The middle pan is more of a 9-1/2 inch pan than a 9 inch. Such a great price for all three, compared to what just one of the non-stick springform pans costs, and these will last ...
